All about sausage varieties

Origins of sausage
The ancient Romans and Greeks already appreciated it. Moreover the name "sausage" comes from the old French saussiche itself from the Latin salsus, which means "salty".
The 4 big families of sausages
After chopping and stuffing, the sausages are cooked and cooked differently. We find raw sausages to grill or fry (merguez, chipolatas), spread sausages (based on meat or liver), cooked sausages such as Strasbourg or Frankfurt sausages and raw sausages, whether smoked or not (Montbéliard sausage or Morteau sausage).

Choosing a sausage is a culinary journey. If Strasbourg, Montbéliard, Morteau or Lyon have their famous specialties, each region has its own varieties: Diot de Savoie, Colmarette (Alsace) or Saucisse de la Beauce (Center Region) lend themselves to many tastings. Some are poached in wine, others are scented with truffle, some are tasted cold and others hot ... And for the traditional hot dog? This will be the wiener, a small sausage of German origin.
