The ingredients for gaspachoAllo Sophie :
. 500 g melon flesh (2 small melons)
. 1 chopped onion thinly sliced
. 2 small tomatoes cut in 4
. 1 tablespoon balsamic
. 3 tablespoons of olive oil
. 10 mint leaves
. 10 leaves of basil
. The juice of half a lemon
. 1/2 teaspoon of Espelette pepper
. Salt and pepper from the mill
The ingredients for the finish:
. 2 small melons
. 4 melon balls
. 2 tablespoons chopped pistachio
. The juice of half a lemon
. 2 tablespoons olive oil
. Flower of salt
Utensils for the recipeAllo Sophie :
1 melon spoon (to empty the melon seeds and make pretty melon balls), 1 chopper, 1 blender
Preparation of gazpachoAllo Sophie :
In a blender, put all the ingredients.
Salt, pepper and mix for 30 seconds.
Taste and adjust the seasoning if necessary.
Put in the fridge for at least an hour.
Sophie's finishes:
When serving, cut the melons in 2 and remove the seeds.
Slightly cut the base of each half melon and arrange them on the plates.
Sprinkle with lemon and olive oil.
Sprinkle with chopped pistachios and fleur de sel.
Spread the gazpacho in 4 small glasses that you will deposit in the hollow of each melon.
Decorate with basil leaves and a ball of melon.
Serve well fresh.
