Birth of sushi

A long time ago, the Japanese kept the fish in rice mixed with salt or vinegar. Then they threw the rice ... This practice proved a serious waste in times of scarcity. Raw fish dishes with vinegar rice have become today's sushi.

The best-known sushi is the negiri, a sort of elongated dumpling, made of pressed rice, topped with a slice of raw fish (tuna, salmon most often).

The makis are also considered sushi: it is rice and fish wrapped in a sheet of seaweed (nori), then cut into slices or served cone (temaki).

Sashimi do not belong to the sushi family. These are simple slices of fish served raw.
