Chocolate cake

Ingredients (for 12 to 15 people)
280 g of chocolate Caribbean or Guanaja de Valrhona
280 g of sugar
250 g of butter
9 egg yolks
5 whites
Bitter cocoa

Preparation
Melt in a bain-marie chocolate, add the soft butter out of the fire.

Mix for 5 minutes the sugar and the yolks. Add the butter mixturechocolate and mix another 3 minutes. The mixture must be compact.

Add the whites up in firm snow.

Bake half the mixture for 1 hour at 170 ° C in 1 circle or baking square, buttered and floured.

Let cool, then cover with the rest of the mixture that will have been kept at room temperature.
