Dessert: stollen

The recipe for stollen, a true German institution, varies from region to region. Here is a basic version. Plan to cook this cake two to four weeks in advance.

Ingredients (for 6 people):
1 kg of flour
100 g of yeast
80 g of sugar
300 ml warm whole milk
350 g of butter
The zest of a lemon
100 g of lemon candied
100 g oforanges candied
200 g of almond sticks
400 g raisins
50 g icing sugar
1 tablespoon of vanilla sugar
1 teaspoon of salt

Preparation:
Preheat the oven to 180 ° C. In a large bowl, combine three tablespoons of milk, a tablespoon of sugar, the yeast and the sifted flour until a uniform dough is obtained. Cover with a cloth and let stand for 15 minutes.
Mix the melted butter with the remaining sugar and milk, add the salt, the zest of lemon, stir in the first dough, and knead again. Add them oranges, lemons, grapes and vanilla sugar, knead.
Cover and let stand until the dough has doubled in size.
Place the dough in a terrine to give it the shape of a pavement. Butter and flour a baking sheet, put the dough in it. Cook 65 to 80 minutes. Once the stollen comes out of the oven, brush it with butter and cover it with icing sugar.
