Discover yuzu, an essential citrus fruit in the kitchen

What is yuzu?
Yuzu, of Chinese origin is the fruit of the tree that bears the same name. As at the lemon green, we find in his pulpit big seeds. Besides these 2 small citrus look alike, although the Yuzu is a little bigger (5/7 cm) and less smooth. Green or yellow, its color varies according to its level of maturity. Question taste, nothing to do with the lemon, the flavors of yuzu are a refreshing mix between grapefruit and mandarin.

The virtues of yuzu
Rich in vitamin C, yuzu is famous in Asia for its medicinal properties. It is known to cure colds and winter diseases and also fight against cholesterol.

If the yuzu is of Chinese origin, it is in Japan and Korea that it is the most cultivated. Besides, it is present in a good number of preparations: ponzu sauce with yuzu, yuzu-mizo sauce, sashimi with yuzu ... And for more than 10 years now Western chefs have adopted it. Nicolas Le Bec, owner of 1 restaurant in Lyon (2 Michelin stars), Henri Le Roux, famous chocolatier who thanks to his mini tablet of yuzu macha, won the innovation prize at the Salon du chocolate 2011, or Pierre Hermé who filled his creations last fall. It must be said that yuzu marries rather well to western cuisine. Finally, he's in the kitchen a bit like the lemon : its zest and juice are mainly used to flavor meat and fish, sauces and vinaigrettes. But we also make jam, syrup, and decorate cakes and crème brûlées ... Yes, the yuzu sublime in the same way savory flavors as sweet.
