Dish: Lobster Pork Lobster

A dish high-end, prepared in a quarter of an hour, taken from the cookbook Dare the luxury, editions Dormonval.

Ingredients for 4 persons)
2 lobsters 400 g each
50 g of butter
4 pancakes
150 g green beans
200 g of minicarottes
200 g of gourmet peas
8 pretty asparagus
10 cl of fish stock
50 g of cream
Salt pepper.

Preparation (15 minutes, plus 8 minutes of cooking)
Cook lobsters for 8 minutes in salted boiling water.
Shelling off lobsters and fry them in a little butter. Cut them into nice pieces and put them in the center of each pancake.
Shape the chaplets by tying them with a thong of blanched leek green.
Keep warm.
Cook green beans, minicarottes, gourmet peas and asparagus separately, in salted boiling water.
Keep these vegetables not too cooked, even a little crunchy.
Reduce the fish stock, add the cream and then the butter.
Lay the chaplin in the center of a hot plate, arrange the vegetables around and cover them with hot sauce.
