Egg-free pastry recipe: easy alternatives

Take back your old ones receipts and remove the eggs, the quantities remain the same. The idea is to replace eggs with other products.

 

Tofu
For the recipe Brownies for example, you can use silky tofu and mix it with sugar. It is very used in desserts because it brings softness to the preparations. It must be added last in the preparation.
For floating islands, it's more complicated but with a little crumbled firm tofu and agar-agar, you can work wonders.


Fruits
Fruits are an excellent alternative to eggs: bananas, apples (for a chocolate mousse) or any other fruit containing pectin.


Gelatin
Agar-agar is an excellent substitute to gel a custard for example. For that, you just have to dilute it with a little milk.


Fecula and flour
Mashed potatoes or pumpkin, tomato paste or oat flakes are often used as a substitute for eggs.
Potato and corn starch or arrowroot will also thicken the preparation and will allow it to hold. Some flours (soy or tapioca) can be used to replace eggs when mixed with water. Just like a soy yogurt.


Oil or water
You can also replace the eggs in the pastries by vegetable oil.
Or quite simply, it is possible to simply add a little liquid to the preparation (one to two teaspoons of vegetable milk or water) to make forget the absence of eggs.


One last tip: keep your cake in the fridge, it will crumble much less (this is the problem when there are no eggs).
