Fresh salad of potatoes Princess Amandine
A recipe imagined by Jean-Paul Brémond (The Forge of Antan to Clohars-Fouesnant) of the Brotherhood of Toques of the potato.

Ingredients:
4 potatoes Princess Amandine®
4 mini leeks
2 tomatoes
herbs (basil, parsley dishcoriander, sprouts, spinach)
vinaigrette: grape seed oil, cider vinegar, finely chopped shallot, 1 spoon of Meaux mustard, salt and pepper
coarse salt
Preparation:
Cook potatoes in field dress (start cold salt water) for 20 min, peel and dice.
Cook the mini leeks in salted water and reserve them.
Toss the tomatoes and cut them into cubes.
Wash the herbs and cut them roughly with a knife.
Dressing: Dress in a bowl or bowl and serve dressing separately.
