Matcha is a Japanese green tea. It is obtained by drying unfolded leaves, which eventually become powdered. Used in Zen ceremonies, it is especially ultra practical in cookedbecause it mixes well with other ingredients.
The easiest recipe to use it is the famous green tea cake. But it is especially suitable for snack cakes, soaking in your cup, or chocolate fondant. Better yet, you can use it in ice cream this summer, and even in salty dishes, like our green tea potato fillet.
Powder is not the only way to use tea in your dishes. In bulk, you can brew it and collect the water. Thus, Bourbon tea and vanilla will give a flavor of the islands to this filet mignon.
And to make your little pots of bergamot cream a success, brew Earl Gray in milk, not water.
