Lacquered duck breast

Duck breast lacquered with honey and spices 

4 duck breasts, 1 large clove of chopped garlic, 5cm of soy sauce, 1cm of Chinese spices, 3cm of liquid honey, 1 tablespoon of oil, 1cc of cornflour, 1cc of Sichuan pepper.

Preheat the oven to 180 °. Mix garlic, soy sauce, honey, spices, cornflour, oil and crushed pepper. Slightly cut the skin of the breasts and brush them on both sides. Let them marinate for 30 minutes. Sear the breasts on the skin side so that the fat is well caramelized, then bake in a dish for 30 minutes by basting regularly with the cooking juices. Remove the duck breasts from the dish and set aside in aluminum foil.

Degrease the dish and deglaze the juices with a little water. Add this juice to the remaining sauce and bring to a boil. Serve the minced breasts with the hot sauce.
