Ingredients (for 6 people)
300 g of chocolate 70% black
6 egg whites
4 passion fruits
A pinch of salt
Preparation
Pour the passion fruit pulp into a glass through a Chinese or strainer.
Melt the chocolate in the microwave 3 x 30 seconds stirring each time. Keep 2 good tablespoons of chocolate melted apart. Beat the egg whites with a pinch of salt and stir them in. chocolate, add the fruit juice by gently lifting, then pour the chocolate reserved which will form small lumps. Pour into small ramekins.
Tip: Whites on snow should not be mounted with eggs that are too fresh. The eggs of a few days are better because the white absorbs more air and rises more easily. The trick is to separate the yellows the day before.
