Ingredients (for 6 people)
500 g dry split peas (do not soak them)
500 g of potatoes
1 heel of ham or smoked bacon
1 bay leaf
1 branch of thyme
6 smoked belly slices
Dehydrated meat or veal stock
Put in a large Dutch oven your broken peas, your potatoes peeled but whole, your onion cut into 4, your heel of ham, bay leaf, thyme and pepper.
Wet a little more than at height with water. Bring to a boil, then reduce slowly to simmer and cook for about 1:15. If necessary, add a little water.
Remove the meat and the bouquet garni and mix. Rectify the seasoning if necessary and add either the gravy or a large tablespoon of dehydrated veal stock.
In the meantime you will have toast your slices of dry-smoked breast in a pan. Serve them alongside your mash potatoes broken peas and potatoes.
You can also serve it with grilled meat, truffled sausages, roast chicken ...
