The favorite recipe of Jeff, candidate for the Atelier Masterchef: chicken colombo
Ingredients for 2 people:
4 thighs chicken 2 carrots 1 big potato 1 onion 1 zucchini 1 eggplant 1 clove of garlic 1 lime 1 ginger root 300 g of fragrant rice 3 grains of cardamom 1 bunch of parsley Salt Pepper Madras curry powder or paste Sunflower oil Poultry broth
Preparation of thighs chicken : Cut the thighs in 2 so as to separate the top of the bottom of the thigh. Incise the pieces obtained. Prepare a marinade with garlic, ½ lime juice, grated ginger, curry powder. Season with salt and pepper and add sunflower oil. Marinate for about ten minutes. Mince the onions. Preparation of vegetables: Cut zucchini and eggplant into large cubes. Cut the carrots in 4 lengthways. Blanch carrots and zucchini for 2 minutes in salted water. Brown the aubergines. Season.
