Masterchef technique: what to remember from episode 9

Only three weeks before the end of the adventure Masterchef, already, but episode 9 was another opportunity to fill up with ideas, knowledge and various tips to be at the level of the best amateur cooks in France. In this episode, the candidates have to cook the typical dish of a country. Claire, who had fallen on Mexico, decided to prepare a ceviche. Ok, but what's a ceviche?

All the secrets of ceviche
The ceviche is a dish from Latin America (on it the candidate of Masterchef was not deceived) whose name includes several different types of dishes. In general, the ceviche corresponds to a marinade of fish or fruit served cold sea. The idea is to leather the fish (salmon, sea bass, sea bream) or fruits sea ​​bass (shrimp) in lemon juice. Onions, tomatoes and coriander are added to the preparation before serving cold.

All about okra
In her Indian dish, Nathalie, the young candidate of Masterchef, chooses to integrate gombos. While the jurors were moderately appreciative of the way in which she prepared them, the okra aroused our curiosity. Okra is a tropical flowering plant whose fruit consists of a gelatinous substance that goes perfectly with tomato, onion or pepper, but also spices such as curry or coriander.

What does it mean to "meat a meat"?
In the first test under pressure in the ninth episode of Masterchef, Sabrina and Olivier had to prepare a meat before putting it in cooking. After choosing a nice piece of meat, and cut it to give it a pretty shape, so they had to sleeve it, that is to say prepare the bone to remove the meat which surrounds it.

What is lemon balm?
The pressure test between Sabrina and Olivier in Masterchef was also an opportunity to work with lemon balm leaves. Behind the name "melissa", lemongrass is also hiding. This aromatic perennial plant is used in a thousand and one ways in cooking. Finely chopped lemon balm leaves can be mixed with salad or grated carrots to add a light lemony scent. It also goes perfectly with soups, stuffings, meat white, poultry or fish.
