Orange crust and spruce box ... cheese looks like the Mont d'Or. Normal, its producers have reproduced the manufacturing methods of this Jura specialty. The difference: they use goat's milk. Its inventors, Monsieur and Madame Garros, from the Col del Fach in the Ariege, have been producing for twenty years already.
Very creamy, with a rather fine taste, the Ariège goat recalls a little reblochon. Marie Quatrehomme advises to cut a strip of spruce, to scrape the crust, then to taste this cheese with a spoon.
