The origins of pork colombo

Native Americans, Africans, English, French, Spanish, Portuguese, Indians, Chinese ... the peoples who settled in these Caribbean islands are as numerous as they are different. Each bringing with him his culture and culinary traditions. Together, they created one of the richest kitchens in the world.

The traditional Indian curries, for example, have adapted to local products, to become the famous colombos. Our succulent pork colombo with sweet potatoes shows the interest of the mixture of sorts.

Similarly, cod acras come from Portugal ... after a passage through Africa. And this banana leaf lime salmon has both Asian and African accents.
