Wok of autumn vegetables with roasted chestnuts

Recipe for 4 people
Preparation: 30 minutes
Cooking time: 15 minutes

Ingredients for the wok recipe with vegetables and chestnuts :
- 500g of chestnuts Périgord Limousin
- 1 bunch of chives
- 4 cl sesame oil
- 2 cl olive oil
- 50 g of butter
- 1 carrot of sands
- 1 celeriac
- 1 carrot
- 1 beet
- 50 g chanterelles
- 1 onion
- 5 g Szechuan pepper
- Guérande salt flower
- Freshly ground pepper

Preparation:
Grill the chestnuts on a plancha or a wood fire.
Wash and chive the chives, mix with the oils.
Peel, wash and prune the vegetables in julienne.
Melt the butter in the sparkling state, add the vegetables and sauté for 3 minutes.
Add at the last moment chestnuts grilled, arrange dome shaped in the center of the plate and decorate around with the rest of the chestnuts toasted.
Season.
