Rack of lamb in olive crust

Recipe for 4 people proposed by the Compagnons du Goût:

 

1 square oflamb bought at your Compagnon du Goût (4 ribs)

1 carrot tops

1 bunch of mini-leeks tops

1 bunch of onions

60 g of gourmet peas

60 g green beans

1 artichoke with pepper

60 g bread crumbs

100 g of pitted black olives

2 cloves garlic

5 to 6 tbsp. tablespoon of olive oil

Parsley dish

Rosemary

 

Preparation time: 40 min - Cooking time: 30 min

Enter the square oflamb on both sides, pepper, salt and reserve in a dish going to the oven. Clean the vegetables, cook them separately, then set aside. For the olive crust: Chop black olives as well as garlic and parsley dish in a mixer. Mix the breadcrumbs with the chopped ingredients and add olive oil to form the dough. Spread this mixture on the square. Put in the oven, already preheated, at 200 ° for 20 minutes and let stand.

 

Council of Companions:

For the square oflamb either hot, just before serving, put it in the oven for 3 to 5 minutes at 200 °. You can also accompany this dish of a black olive tapenade toast.
