Christmas aperitif: Acras of prawns

The acras of shrimp or prawns will replace the cod acras during the holidays. An easy alternative and full of taste.

For 6 persons
Preparation time: 20 min
Cooking time: 60 min

Ingredients:

30 prawns or 300g of shrimp
360 g flour
1 packet of dry yeast
3 eggs
4 cloves of garlic
1 bunch of parsley
1 small pepper
Frying oil
Salt

Decorate them prawns while leaving the tail. Reserve the time to prepare the dough.
Sift the flour and yeast into a bowl. Add two pinches salt and eggs. Mix and add the water in a net, stirring constantly until a smooth but not too smooth paste is obtained. Let stand for half an hour.
Peel the garlic. Open the chilli in half and seed it. Wash, dry and thin the parsley. Chop it with garlic and chilli. Mix well.
Heat the cooking oil in a large saucepan.
Coat them shrimp in the dough and slide them into the boiling oil. Let it swell. When they are golden brown, remove them from the oil with a skimmer and place them on paper towels. Repeat until exhaustion of the dough and prawns.
Serve immediately with lime wedges.
 
We can also replace prawns by small shrimp and cut into small pieces to incorporate them into the dough.
