We traditionally eat pork à Christmas in the French West Indies, whether in the form of pâtés, sausages, ham or pork in sauce.
Recipe for 4 people

500 g of loin of pork or shoulder
2 green peppers
1 clove of garlic
1 C. crumbled thyme
1/2 tablespoon of turmeric (or curry)
2 tbsp. oil soup
Cut the meat into cubes and the onion into strips.
When they have a nice color, fry the meat and onion for 3 minutes in the oil. Add the thyme, the tomatoes cut in small cubes, the turmeric then the crushed peppers and garlic.
Cook for 10 minutes.
Serve this pork Creole with white rice.
