Crushed pear of hazelnuts

Belle-Hélène pear crushed with hazelnuts 


2 pears, 1 liter of water, 600 gr of sugar, 250 gr of dessert chocolate 70% cocoa, 1 lemon untreated, pepper, 1/2 vanilla pod, 40 gr of butter, 1 packet of hazelnuts.
 
Heat the water with the sugar. Add the zest of the untreated lemon and its juice (1/2 lemon) and half of the vanilla pod.

Peel the pears and plunge them in boiling syrup for 15 minutes. Cover with parchment paper. Let the pears cool in the syrup. Melt butter and chocolate in a bain-marie. Add a little syrup and cover the cooled pears with this hot chocolate. Crush the hazelnuts.

Steps :

1 ° poach the pear in syrup.

2 ° make chocolate.

3 ° Top and sprinkle with hazelnuts.
