Masterchef technique: how to assemble a white butter?

After a test of knowledge on cheese, Karim, Matthias and Xavier found themselves on the hot seat in the adventure Masterchef and it was necessary, in order to decide between them, to organize an express technical test. Candidates from Masterchef so have to ride a Butter white in 10 minutes. But by the way, what is a Butter White ?

Basic basis of cooking, the Butter white is an emulsified sauce that is served hot, usually with fish. To mount a Butter classic white, you have to:

  • 250 grams of Butter, 30 grams of shallots, 50 centilitres of White wine and 25 centilitres of vinegar White. Start by chopping the shallots, and cut the Butter in small dice. Fry the shallots in a saucepan and gradually add the vinegar and the White wine. Let reduce all on low heat.
  • To mount the Butter white, gradually stir over the dice Butter while whisking vigorously (making a forefinger gesture of "eight" wrist). Once your Butter white mounted, put everything in Chinese and add enough pepper and salt for a perfect seasoning. That's it, you have the level to be part of the top 10 of Masterchef. Enjoy your meal !
