5 tips to succeed a very gourmet tajine

Prepare a marinade
To give flavor to your tajine, prepare a marinade. This is of course not essential for the recipe but the flavors will be better. Are you planning a monkfish net? Coat it with a mixture of coriander, parsley, paprika, saffron, cumin. For meat, opt for onions, ginger, turmeric and cinnamon. Depending on your recipe, add thyme, honey, paprika, garlic, etc. Pour some water and marinate for several hours. Your meat will be perfumed at will!

Choose ingredients that gently cook
A tajine is a dish simmered. So prefer foods that support long cooking. So, forget the whiting that cooks too fast and replace it with monkfish. You want to use it? In this case, fry it and add it at the last moment. If not, think of the sea bream and accompany it with candied lemons, olives, carrots and zucchini, which melt in the mouth. And do not forget, a tajine is even better the next day when it is warmed up.

Use a suitable dish
For cooking, you have all the choices. Either you opt for a casserole and use a dish to tajine for the presentation. Either you use it from the beginning of the recipe. To know: only those terracotta are intended for cooking, so forget the dishes decorated. But beware, dressage may be a bit messy. In this case, adjust the shot by adding fresh tomatoes, mint, almonds or sesame seeds on top for a nice visual effect.

Do not forget the broth!
In a casserole, fry your pieces of meat (chicken, lamb, veal ...), add spices, vegetables and pour some water before letting it simmer. To flavor your tajine, do not hesitate to flavor your broth with aromatic herbs. If you are in a hurry, put a cube in your preparation. But remember, never pour cold water into your recipe. It could break your dish terracotta. It would be a shame, no?

Bet on variants
Forget for a moment the tajine with prunes or raisins already seen and reviewed, and replace it with a recipe with figs or apricots. Similarly, replace burbot with salmon, tuna, shrimp or duck. On the fruit side and vegetablesthink sweet potatoes, fennel, Jerusalem artichokes, turnips ... Use peas, pears, artichokes, etc. And to perfume, use a hint of orange blossom. In short, let your imagination run wild for a truly gourmet tajine!
