The recipe of shortbreads with Emmental and thyme flowers is proposed by the Culinary Circles of France (Collective of the French Emmental).
For about 20 shortbreads:

Cooking time: 10/12 min
Ingredients:
. 100g of flour
. 60g of half-salted butter
. 5 cl of water
. 80g of grated Emmental
. 1 egg yolk
. 1 pinch of fleur de sel
. 1 pinch of pepper
. 2 branches of fresh thyme
Preparation:
Mix the flour, butter, water, salt, pepper, egg yolk,
cheese grated and thyme leaves.
Knead and form a ball, film and chill about 1:30.
Preheat the oven to 180 ° C (item 6).
On a floured surface, roll out the dough, cut with a cookie cutter, and bake on a baking sheet lined with parchment paper.
Cook about 10/12 min. At the end of cooking, leave the shortbread on a wire rack.
Emmental shortbreads can be accompanied by a sauce with
cheese white scented with chives or garlic.
