Father's Day menu: Shortbreads with emmental and thyme flowers

The recipe of shortbreads with Emmental and thyme flowers is proposed by the Culinary Circles of France (Collective of the French Emmental).

For about 20 shortbreads:

Preparation: 10 min
Rest time: 1h30
Cooking time: 10/12 min

. 100g of flour
. 60g of half-salted butter
. 5 cl of water
. 80g of grated Emmental
. 1 egg yolk
. 1 pinch of fleur de sel
. 1 pinch of pepper
. 2 branches of fresh thyme

Mix the flour, butter, water, salt, pepper, egg yolk, cheese grated and thyme leaves.
Knead and form a ball, film and chill about 1:30.
Preheat the oven to 180 ° C (item 6).
On a floured surface, roll out the dough, cut with a cookie cutter, and bake on a baking sheet lined with parchment paper.
Cook about 10/12 min. At the end of cooking, leave the shortbread on a wire rack.
Emmental shortbreads can be accompanied by a sauce with cheese white scented with chives or garlic.
