As a Mediterranean, what does cooking mean to you?
I am very cooking! First of all it's a sharing, I like noble materials to be highlighted. Olive oil, meat, poutargue, honey from home, bread, olives ... In a dish, I need to see them olives!
 
Improvised dinner with friends, what are you preparing?
I make an English magpie, a kind of moussaka but without eggplants with potatoes, meat that I let marinate for a long time, a lot of basil, lemon ... Or I'm doing something simpler, very fine spaghetti, cooked al dente, with slices of bottarga and some peppers on it. All with a good wine of course ... Do you like it?
 
If you have a small hollow on what do you crack?
Dried tomatoes, tapenade, I love the tapenade.
 
What are your favorite Greek food addresses in Paris?
There is a wholesaler called Chirag who is excellent, there is everything. There is the best feta in the world.
 
Good Greek restaurants to advise us?
The Delights of Aphrodite, a Greek restaurant quite chic and for a more family atmosphere, I recommend Les Diamantaires, a family canteen, rue Lafayette or Apollo in the 7th arrondissement of Paris, you have to ask Costa, it's my mate !
