Polish recipe: Borsch

500 g of beets
A cube of vegetables defatted
1 spoon to soup salt
1 teaspoon of sugar
2 spoons to soup of lemon juice
1 bouquet garni

Peel and cut beets sliced. Put in a Dutch oven with 1 liter of water.
Add the other ingredients, and simmer until you see the appearance of foam.
Rectify the seasoning according to your taste by adding sugar and lemon juice.
