Sylvain Truffet gives us his secrets to make ice cream and organic sorbets

What are the keys to success for making organic ice creams and sorbets?
The first and most important step to achieve delicious ice and sorbets is to find and use good raw materials. Whenever possible, buy them directly from the producers, to ensure the quality of the products but also to pay directly to the people who work. Then, just a little practice and some tips to make delicious sorbets.

Can we make a tasty ice cream without a blender or an ice cream maker?
First, you can investigate around you. Many ice cream makers are certainly sleeping in the cupboards of your neighbors, friends, colleagues ... If you can not find one, you can pour your preparation in a salad bowl and place it in the freezer. As soon as it starts to "take", take out the salad bowl, scrape the edges with a spatula and mix the preparation a few moments. Repeat this two or three times while taking your ice cream. Mixing breaks the crystals and incorporates a little air into the mix.

Do aromatic herbs and spices lend themselves to ice cream?
Yes ! Basil, cinnamon, cardamom, rosemary ... All experiments are allowed, provided you know how to dose spices and herbs.

How to make a delicious kulfi ice cream?
Kulfi is a ice cream traditional North Indian, based on milk, flavored with cardamom and pistachios. I propose a simplified recipe in my book, just a few ingredients and the preparation is fast.

What do you think is the most unusual recipe of your work?
I hesitate between carrot sorbet, frozen gaspacho and Sharbat Angor, a frozen Iranian drink. In fact, the most unusual recipe will be the one you create with a good dose of dreams, imagination and greed. All with a little help thanks to the advice and techniques of the book.

Finally, how to make a tasty milk shake?
I repeat myself but everything depends on the raw materials! A good ice cream or sorbet, good milk cow or vegetable, all well dosed and mixed ... To enjoy in the sun, it's better too!
