4 gourmet ideas for cooking forgotten vegetables

1 - Warm salad of roasted potimarron
Slowly roast your quarters of pumpkin in a little butter, add a little pepper and serve with a delicious salad rocket and meat chips from Grison. A light and tasty entry!

2 - Pizza with old vegetables
Finely peel some sweet potatoes, parsnip, Jerusalem artichoke, raw beets and tuberous chervil, and place them on a baking sheet before basting them with olive oil. After cooking about 45 minutes, you can arrange them on your dough with mozzarella and cook again for a quarter of an hour. A pinch of Espelette pepper and your delicious pizza the vegetables candied is ready to be tasted.

3 - Vegetable chips
For a aperitif gourmet and original, finely slice beetroot, sweet potato and parsnips, and then pass them to the deep-fat fryer or oven (it's less fat) to get an assortment of chips in three colors, a great alternative to potatoes.

4 - The puree of Jerusalem artichoke is invited in my party menus
The Jerusalem artichoke is perfect with truffles, but also scallops and foie gras. With its delicious flavor of artichoke, you can add it to velouté, mashed with shallots or a knob of butter: your ideal ally for an original New Year's Eve menu.
