Ingredients (for 8 people)
1 beautiful turkey 5 kg
1 bouquet of rosemary
1 bunch of sage
1 apple cut into wedges
1 celery stalk
50 g melted butter

Preheat the oven to 170 ° C.
Remove the giblets and the neck of the turkey. Rinse with cold water and dry carefully.
Raise the skin of the whites to slip the leaves of rosemary and sage. Then smooth the skin to put it back in place.
In the cavity left by the neck, arrange the quarters of apples, the onion cut in half and the stalk of celery cut in four.
Butter the turkeycover with baking paper or aluminum foil and bake for at least 3 hours: turkey is cooked to perfection when its temperature in the center of the flesh reaches 80 ° C.
Take out then turkey from the oven, let it warm for a quarter of an hour before cutting it.
Serve with mashed chestnut and broccoli, Brussels sprouts.
