Make your makis yourself

By the way, what is a maki? It is often taken for a sushi but the maki, although it also belongs to the Japanese culinary tradition, wraps its rice vinegary, its fish raw and its different ingredients in a dried seaweed leaf called noki.

Rice that you have to choose is a rice round. You can use a rice Japanese but a risotto grain is also suitable. The important thing is to let it soak a full night in cold water before cooking.

For cooking, you need a volume of water equal to the amount of rice. Cook very slowly for about 15 minutes, then leave rice swell to cover off the fire. Let it drain for an hour.

Heat the rice vinegar - about 5 tablespoons for 400 g of rice - and dilute a tablespoon of sugar plus a few pinches of salt. Let the mixture cool down and mix with rice.

Wasabi is a green powder that you dilute in water. Be careful, wasabi is extremely strong!

Raw fish that you use must be purchased as fillets - unless you cut your fillets yourself in a fish fresh. Check that no edge remains. Cut into the net a piece half a centimeter thick, as long as possible.

On a bamboo matplace a half sheet of noki. Prepare a saucer with a little water and vinegar rice. You will dip your fingers so that the rice does not stick.

On the noki, spread a layer of rice taking care to leave the side edges clear, a little wasabi in the middle and then a long ribbon of fish on the wasabi.

Hold the trim and roll the mat until the edges of the noki meet.
Press lightly to make sure rice.

Unroll the mat: you get a long maki. Using a sharp knife and previously passed in the saucer of water and vinegar, cut about 6 maki.

The makis eat often dipped in soy sauce or a little wasabi.
 
Our advice:
If you want to add ingredients such as cucumbers, small vegetables cut in julienne, ginger, sesame seeds ... it is better to have all the ingredients on a noki in the diagonal. You then have your rice in dumpling, your wasabi, your fish raw and your other ingredients in a cone shape by closing the sides using a grain of rice to stick them well.
