Pour this cream into a saucepan and cook over low heat until thick, stirring constantly with a wooden spoon. Remove from heat at first simmering and immediately pour the cream into a salad bowl to stop cooking. Cool completely.
Preheat the oven (thermostat 7 - 210 ° C). Butter an oven dish with half of the butter.
Add the mandarin liqueur to the cooled cream and whip again to perfume the whole mass and smooth well.
Beat the egg whites until stiff, then gently fold into the mixture, using a wide, round motion. Peel the
clementines and detail them in quarters.
Melt the butter in the pan and sauté the quarters.

pancakes on the worktop and put two large spoonfuls of cream in the center of each.
Fold the four sides on top, without completely obscuring the cream. Store immediately
pancakes in the buttered dish, pressing them side by side so that they do not open.
When all
pancakes are placed, sprinkle with remaining butter in small hazelnuts and sprinkle with icing sugar.
Bake at medium heat and cook for 10 to 15 minutes. At the end of the oven, serve without waiting!
