Crunchy Mini Muffins with Raspberry, Crushed Almonds & Nuts

Ingredients for 4 persons :

  • - 2 tablespoons coarsely crushed almonds,
  • - 2 tablespoons coarsely crushed macadamia nuts,
  • - 190 g flour,
  • - 120 g icing sugar,
  • - 130 g of soft butter,
  • - 1 ripe banana,
  • - 100 g of raspberries,
  • - 2 whole eggs,
  • - 1/2 teaspoon baking powder.


Preparation:
Preheat your oven to 180 ° C. Mix the butter and icing sugar. Whip energetically then add the eggs one by one. Add yeast and flour, whisking well to obtain a smooth paste. Finish with crushed banana, macadamia nuts and almonds. Mix and add the raspberries and mix again gently. Butter the mussels muffins then pour in the preparation. Bake for 25 to 30 minutes. Unmold and let cool on a wire rack.
